Melt the bag of chocolate chips in either a double boiler or in a large microwave safe bowl in 30-second intervals (mixing in between each).
Once the chocolate is melted, mix in 1 tsp of the peppermint extract. Taste the chocolate. If it's not peppermint-y enough for you, add another teaspoon.
Put the candy canes in a plastic bag and crush them into small pieces by hitting them with a big spoon on the counter.
Mix half the crushed candy canes into the melted chocolate.
Line a jelly roll pan or cookie sheet with parchment paper. Spread the melted chocolate onto the pan with a half inch of space left around the sides. (If using cookie sheet, you'll only be spreading the chocolate on half the pan.) The rectangle of chocolate should be about 10" x 8".
Sprinkle the rest of the crushed candy cane on top of the chocolate. Let the chocolate harden, then break up into shards. Enjoy!
