Easy Homemade Applesauce

I. Love. Applesauce. So of course the first thing I did after I went apple picking was go home and make applesauce! It's so ridiculously easy to make too. You can eat it for breakfast, snack, dessert...heck eat it for lunch or dinner too if you want. For my birthday in September, I decided I wanted to go apple picking. The only variety they had that day since it was early in the season was Jonamacs. I've never had them before, but they're supposed to be good for baking. They sure made a really yummy applesauce. Applesauce Time! Prep Apples…

Autumn Apple Hand Pies (With Vegan Option!)

Apple anything is always on my list of favorites and these apple hand pies are a must have for the autumn season. I love apple pie, but I think I might love these even more because they remind me of the little hand pies that I used to get at the convenience store when I was a kid. I think my husband and I ate these in approximately 2 days. It would have been less, but I had him ration them so we didn't make ourselves sick. It's so easy to just pop one in your mouth, then eat another…

Chocolate Cake (Gluten Free & Vegan Options!)

Years ago, my mom made a chocolate cake for my birthday and she used this recipe. We never turned back after that. This is truly the best chocolate cake you will ever eat. All credit goes to Robyn over at Add a Pinch blog where we found the recipe, but I simply had to share this with you all. This is the cake I turn to for a lot of special occasions because I am a huge chocolate lover, and what's better than a classic chocolate cake? I dress it up with raspberries and some raspberry jam in the middle.…

Rustic Blueberry Galette For Two

This rustic blueberry galette is a simple yet delicious dessert, perfect for the summer with it's vibrant fruity taste. I've had the idea for a while and never actually made a galette before so it was fun to try something new. I made a mini one too, so this is a great little summer dessert for two. I add a pinch of cinnamon, nutmeg and lemon zest to really bring out the blueberry flavor and it works beautifully. What's a Galette? A galette is basically a pie without the pie dish. You use a shortcrust pastry like you would for…

Homemade Strawberry Jam, No Pectin Needed

My husband and I went berry picking last weekend to get the last of the strawberries before they went out of season. They were so red and ripe, I couldn't wait to get home and make some fresh jam with them. This was only my second time making jam and the result was quite successful! I made two batches with differing amounts of sugar and they came out a tad different, both equally good though. If you go on the internet and search jam recipes, the variation in the amounts of sugar that is  put into different recipes amazes me.…

Classic British Treacle Tart (Vegan Option!)

My next bake is so British I couldn’t even get all my ingredients at the super market, I had to order one ingredient online! You might recall this dessert mentioned in Harry Potter... Treacle Tart! I had no idea what to expect from this, let alone the taste.   https://www.youtube.com/watch?v=2LWsb2TS_cI Treacle Tart is actually a super easy, yummy recipe that I will turn to if I need to make a dessert on the fly. I even keep Golden Syrup stocked in my cabinet now just for it. The taste is lemony and sweet, and the consistency is mushy and delicious. I…

Apple Pear Tarte Tatin (Vegan!)

If you keep up to date on my posts, you know I like to bake things that are on the Great British Baking Show. I never heard of tarte tatin until I watched it on the show. I am so glad I discovered it thought and decided to bake an apple pear tarte tatin because it is delicious! This is also the first time I’ve made rough puff pastry and caramel sauce from scratch. This tart is three elements: the puff pastry, caramel, and fruit. The traditional tarte tatin is made with apples and according to Wikipedia was named after…

Homemade Bagels

I thought bagels would be a lot harder to make, but it turns out they really aren't all that difficult. I feel like most people have this preconceived notion that bagels are hard to make for some reason, so no one every tries to make them at home. It’s also really convenient to just go buy a dozen down the road instead of slaving away in the kitchen, but homemade is always better! I did have some pitfalls, but they still ended up pretty tasty! I had to make savory and sweet bagels for the showstopper challenge so first is…

Ooey Gooey Cinnamon Buns

My brother and I have always had a weakness for cinnamon buns, especially the ooey gooey kind. My mom would buy the Pillsbury cinnamon buns in a can on weekends or special occasions and we would have them for breakfast. We would fight over who would get the last one, they were so good! As we grew up, my mom realized my brother and I had food allergies so we had to find dairy free alternatives for everything we loved. We ate a ton of Immaculate Baking Cinnamon Buns after that which are dairy and soy free. It's a great…
