Almond Butter Cookies — Gluten & Dairy Free

These almond butter cookies are the product of my recent liking to almond butter! I am a huge peanut butter fan, so I never thought to try alternate nut butters, but I am super happy I did because almond butter is healthier than peanut butter and it's pretty darn yummy!  So I decided on developing a almond butter cookie recipe that was allergy free. These super yummy almond butter cookies are chewy and delicious with added chocolate chips and pecans.  I love baking, it's one of my favorite things, but I have never tried to make my own recipes. I…

Classic British Treacle Tart (Vegan Option!)

My next bake is so British I couldn’t even get all my ingredients at the super market, I had to order one ingredient online! You might recall this dessert mentioned in Harry Potter... Treacle Tart! I had no idea what to expect from this, let alone the taste.   https://www.youtube.com/watch?v=2LWsb2TS_cI Treacle Tart is actually a super easy, yummy recipe that I will turn to if I need to make a dessert on the fly. I even keep Golden Syrup stocked in my cabinet now just for it. The taste is lemony and sweet, and the consistency is mushy and delicious. I…

Banana Nut Muffins — Gluten & Dairy Free

My mom has a lot of food allergies to deal with, she can't have wheat, soy, or dairy, so when I found these banana nut muffins, I thought I would try the recipe. It did not disappoint! These muffins are super moist and chock-full of nuts and chocolate chips for plenty of flavor and crunchy goodness. Besides the fact that they are free of everything my mom is allergic to, they are also refined sugar free! So they are pretty darn healthy if you ask me. The recipe is from a lovely blog I have started following called The Toasted…

Apple Pear Tarte Tatin (Vegan!)

If you keep up to date on my posts, you know I like to bake things that are on the Great British Baking Show. I never heard of tarte tatin until I watched it on the show. I am so glad I discovered it thought and decided to bake an apple pear tarte tatin because it is delicious! This is also the first time I’ve made rough puff pastry and caramel sauce from scratch. This tart is three elements: the puff pastry, caramel, and fruit. The traditional tarte tatin is made with apples and according to Wikipedia was named after the…

Apple Crumble Tart

This is not your typical Apple Pie recipe. Dare I say it, this apple crumble tart is even better than Apple Pie! Who doesn't love a crumble topping? The source of this brilliant recipe is the amazing John Whaite. He is the winner for Series 3 ("the beginnings" collection on Netflix) of the Great British Baking Show. During the COVID-19 Pandemic, John has been home quarantining and he's been posting new bakes on his Instagram stories practically everyday. I, of course, have been watching them all religiously. He gives great little tips during his baking demonstrations. I feel like I…

Orange Babas: Non-Alcoholic

This recipe was definitely a little messy, but really fun to make! Rum babas are a kind of hybrid between a bread and a cake. It requires yeast and rising before it's baked. The dough is super sticky, so it's a little hard to work with, but don't be tempted to add a ton of flour to make it easier. Adding more flour will make the babas too dry. I had scraper in one hand basically the whole time while I was kneading to help me peel the dough off the counter. I decided to try out my own version…

Classic Pineapple Upside Down Cake

So I wanted to bake an upside down cake this weekend, but I wanted to try something different. I had decided I would do David Lebovitz’s recipe for Plum Blueberry Upside Down Cake from his book Ready for Dessert: My Best Recipes… but after I had decided and went out to buy the ingredients, I couldn’t find any plums!  So on to plan B. I had to think of a recipe quick to replace the Plum Blueberry Cake because I needed a cake to bring to a party. My husband suggested the Pineapple Upside Down Cake my mother-in-law makes which…
