Start Your Own Cookbook Club

Starting a cookbook club is one of the best things I ever did. In this post, I'll go into what a cookbook club is, how to start your own, and why you should.  Good food, good friends, and good talks. That's it in a nutshell, but let's dig in!  What is a Cookbook Club? A cookbook club is kind of a combination of a lot of good things. It's kind of like a book club. It's kind of like a potluck dinner. But together. The simple concept is this. You have a group of friends that you meet with regularly…

Lemon Coconut Cookies (Vegan!)

I am so happy I discovered these lemon coconut cookies. They are so healthy and so delicious. The perfect treat! They are 100% vegan, gluten, and sugar free. What could be better? Here's the quick story of how I discovered them. I see a Naturopathic Doctor and she told me that my candida levels were a bit high, so I went on the candida diet for a month where I had to be completely sugar free (I only lasted 3 weeks!). It's a really tough diet, let me tell you, but I happened to find some really yummy recipes while…

Easy Guacamole (Only 5 Ingredients!)

Guacamole is one of my favorite snacks ever. I prefer a simple guac, no cilantro, no jalapenos, no extra spices. I like an easy bare bones version. Some nice crispy potato chips to dip and you now have the best snack on earth. My husband and I can demolish a whole bowl of guac in one sitting without trying. The best part is, this is soooo good for you! No need to feel guilty over eating a whole bowl of it. Besides being the best snack ever, guacamole goes with everything...on tacos, chili, quesadillas, fajitas, sandwiches, chicken, heck put it…

Ratatouille — A Classic Vegetarian Dish

I'm pretty sure my inspiration to try out Ratatouille was actually the adorable Disney movie. Remy made me want to try it. So I made it for the first time a couple of years ago and my husband and I love it. It warms you right up with a mix of creamy tomato and béchamel sauces that have a little zing from hot red pepper flakes. The veggies all stacked into one another look pretty elegant too. I always feel fancy when I make this dish. I'll admit this ratatouille takes a fair bit of prep work, but it's all…

Easy Peach Cobbler (Vegan!)

This easy buttery delicious peach cobbler recipe actually came from one of my pen pals. She sent me a recipe card for it and I loved it so much, I had to share. I think what makes it extra yummy, is the crispy bruleéd top. With the layer of buttery peaches on the bottom and the sweet cakey layer on top, this easy peach cobbler will satisfy all your tastebuds. I love sending recipes out to my pen pals. I hope they enjoy receiving them as much as I do. If you don't about my lovely pen paling hobby, check…

Blueberry Crumble (Gluten & Dairy Free)

While I was home on vacation, I wanted to make a blueberry crumble with fresh bluberries. My husband and I went to pick the berries fresh at a cute farm stand and it turns out a very windy storm we just had ruined the blackberry crop and there weren't any blueberries left to pick. Sad face! So I bought a couple pints of fresh already picked blueberries from the farm stand and contemplated what fruity dessert I could make with them. I did some experimenting with almond flour and almond butter and created a gluten and dairy free blueberry crumble.…

Easy Homemade Applesauce

I. Love. Applesauce. So of course the first thing I did after I went apple picking was go home and make applesauce! It's so ridiculously easy to make too. You can eat it for breakfast, snack, dessert...heck eat it for lunch or dinner too if you want. For my birthday in September, I decided I wanted to go apple picking. The only variety they had that day since it was early in the season was Jonamacs. I've never had them before, but they're supposed to be good for baking. They sure made a really yummy applesauce. Applesauce Time! Prep Apples…
