Vegan Peppermint Bark (3 ingredients!)

I made up this recipe for vegan peppermint bark last year when I wanted a quick and easy holiday treat that was free from everything my family couldn't eat. I got exactly what I wanted too. This recipe is super quick, only three ingredients and tastes downright yummy!  Vegan Peppermint Bark: Ingredients The only three ingredients you'll need for this recipe are dark chocolate, crushed up candy canes and peppermint extract. That's it!  My favorite brand of chocolate is Enjoy Life. The candy canes should say "suitable for vegetarians/vegans" on it since one of the ingredients is natural flavors (which…

Here's the quick story of how I discovered them. I see a Naturopathic Doctor and she told me that my candida levels were a bit high, so I went on the candida diet for a month where I had to be completely sugar free (I only lasted 3 weeks!). It's a really tough diet, let me tell you, but I happened to find some really yummy recipes while…

Holiday Sugar Cookies — Vegan & Gluten Free!

My traditional sugar cookie recipe was full of ingredients I now cannot have, so I made up a new one. My new holiday sugar…

Blueberry Crumble (Gluten & Dairy Free)

While I was home on vacation, I wanted to make a blueberry crumble with fresh bluberries. My husband and I went to pick the berries fresh at a cute farm stand and it turns out a very windy storm we just had ruined the blackberry crop and there weren't any blueberries left to pick. Sad face! So I bought a couple pints of fresh already picked blueberries from the farm stand and contemplated what fruity dessert I could make with them. I did some experimenting with almond flour and almond butter and created a gluten and dairy free blueberry crumble.…

Easy Homemade Applesauce

I. Love. Applesauce. So of course the first thing I did after I went apple picking was go home and make applesauce! It's so ridiculously easy to make too.  You can eat it for breakfast, snack, dessert...heck eat it for lunch or dinner too if you want.  For my birthday in September, I decided I wanted to go apple picking. The only variety they had that day since it was early in the season was Jonamacs. I've never had them before, but they're supposed to be good for baking.  They sure made a really yummy applesauce.  Applesauce Time! Prep Apples…

Fruity Smore’s Bars — No Bake, Gluten & Dairy Free

After I made the Smore's Ice Cream, I had some leftover chocolate ganache and almond flour graham cracker crumbles. I vowed to try and make a new recipe with them instead of eating them. That's how these fruity smore's bars came to be. It's a layer of graham cracker crumble, chocolate ganache, raspberry jam, and finally toasted italian meringue on top. YUM. I forgot to mention to, it's no bake! The only thing that has to be "cooked" is making a sugar syrup in a pan on the stove for the meringue. This is a quick throw together dessert. The…

Chocolate Cake (Gluten Free & Vegan Options!)

Years ago, my mom made a chocolate cake for my birthday and she used this recipe. We never turned back after that. This is truly the best chocolate cake you will ever eat. All credit goes to Robyn over at Add a Pinch blog where we found the recipe, but I simply had to share this with you all. This is the cake I turn to for a lot of special occasions because I am a huge chocolate lover, and what's better than a classic chocolate cake? I dress it up with raspberries and some raspberry jam in the middle. As…
