I am so happy I discovered these lemon coconut cookies. They are so healthy and so delicious. The perfect treat! They are 100% vegan, gluten, and sugar free. What could be better? Here's the quick story of how I discovered them. I see a Naturopathic Doctor and she told me that my candida levels were a bit high, so I went on the candida diet for a month where I had to be completely sugar free (I only lasted 3 weeks!). It's a really tough diet, let me tell you, but I happened to find some really yummy recipes while…

Holiday Sugar Cookies — Vegan & Gluten Free!

Vegan Holiday Sugar Cookies anyone?! If you are subscribed to my newsletter, I recently told you I just found out that I'm allergic to eggs and sensitive to gluten. So from now on all my bakes will be dairy and egg free, and I'll be coming out with gluten free bakes as well! My traditional sugar cookie recipe was full of ingredients I now cannot have, so I made up a new one. My new holiday sugar…

Blueberry Crumble (Gluten & Dairy Free)

While I was home on vacation, I wanted to make a blueberry crumble with fresh bluberries. My husband and I went to pick the berries fresh at a cute farm stand and it turns out a very windy storm we just had ruined the blackberry crop and there weren't any blueberries left to pick. Sad face! So I bought a couple pints of fresh already picked blueberries from the farm stand and contemplated what fruity dessert I could make with them. I did some experimenting with almond flour and almond butter and created a gluten and dairy free blueberry crumble.…

Harry Potter’s Pumpkin Pasties

Calling all Harry Potter fans! Fall is Harry Potter season in my eyes and I am so here for it. I made these lovely sweet pumpkin pasties for the first time this season and I can tell you it won't be the last. Don't know what a pumpkin pastie is? Think pumpkin pie in hand held form. Sweet pumpkin spiced goodness encased in a golden flakey shortcrust pastry, ohhhh yea. I plan on making these again when I do a Harry Potter themed feast and have a movie marathon. Easy Homemade Applesauce

I. Love. Applesauce. So of course the first thing I did after I went apple picking was go home and make applesauce! It's so ridiculously easy to make too. You can eat it for breakfast, snack, dessert...heck eat it for lunch or dinner too if you want. For my birthday in September, I decided I wanted to go apple picking. The only variety they had that day since it was early in the season was Jonamacs. I've never had them before, but they're supposed to be good for baking. They sure made a really yummy applesauce. Applesauce Time! Prep Apples…

Autumn Apple Hand Pies (With Vegan Option!)

Apple anything is always on my list of favorites and these apple hand pies are a must have for the autumn season. I love apple pie, but I think I might love these even more because they remind me of the little hand pies that I used to get at the convenience store when I was a kid. I think my husband and I ate these in approximately 2 days. It would have been less, but I had him ration them so we didn't make ourselves sick. It's so easy to just pop one in your mouth, then eat another…

Chocolate Cake (Gluten Free & Vegan Options!)

Years ago, my mom made a chocolate cake for my birthday and she used this recipe. We never turned back after that. This is truly the best chocolate cake you will ever eat. All credit goes to Robyn over at Add a Pinch blog where we found the recipe, but I simply had to share this with you all. This is the cake I turn to for a lot of special occasions because I am a huge chocolate lover, and what's better than a classic chocolate cake? I dress it up with raspberries and some raspberry jam in the middle.…

Rustic Blueberry Galette For Two

This rustic blueberry galette is a simple yet delicious dessert, perfect for the summer with it's vibrant fruity taste. I've had the idea for a while and never actually made a galette before so it was fun to try something new. I made a mini one too, so this is a great little summer dessert for two. I add a pinch of cinnamon, nutmeg and lemon zest to really bring out the blueberry flavor and it works beautifully. What's a Galette? A galette is basically a pie without the pie dish. You use a shortcrust pastry like you would for…
