Easy Guacamole (Only 5 Ingredients!)

Guacamole is one of my favorite snacks ever. I prefer a simple guac, no cilantro, no jalapenos, no extra spices. I like an easy bare bones version. Some nice crispy potato chips to dip and you now have the best snack on earth. My husband and I can demolish a whole bowl of guac in one sitting without trying. The best part is, this is soooo good for you! No need to feel guilty over eating a whole bowl of it. Besides being the best snack ever, guacamole goes with everything...on tacos, chili, quesadillas, fajitas, sandwiches, chicken, heck put it…

Red Bean Chili

This red bean chili is a fall favorite in my house. I love to make it once it starts getting cold out. Who doesn't love a good chili recipe? It's got a secret ingredient too...cocoa. Who'd a thought, but I'm telling you it works! This recipe comes from one of my favorite food blogs, Smitten Kitchen.  I did make some slight modifications, but other than that this recipe is golden. I. Love. Red Bean Chili. It's like a heartier version of a taco without the shell and there's so much that can go with it. If you're into it, you…

Easy Pea Soup With Gluten Free Garlic Bread

This quick and easy pea soup is my go to comfort food during the winter. I love to throw some pieces of breakfast ham in there and serve it with garlic bread. It really warms you up after a chilly winter day. If you're serving this for guests and want to get fancy with it like I did in the picture, you can swirl a little milk or plant based milk of your choice on top. I put the ham in my soup to give it a little extra flavor and something for my mouth to chew since the rest…

Mom’s Thanksgiving Stuffing

Stuffing is one of my favorite parts of Thanksgiving, especially Mom's Thanksgiving stuffing. It just doesn't feel right when there isn't stuffing on the table with the turkey. Am I right?  My mom's version is a family recipe she got passed down from my grandma. It's simple and delicious. You can make this stuffing with regular or gluten free bread and it comes out superb either way. I don't know about you, but I'm kinda weird and I like to eat stuffing that wasn't actually cooked in the turkey. Mushy bread and me just don't mix.  My mom would always…

Vegan+Gluten Free Stuffed Mushrooms

These stuffed mushrooms have become a family favorite. I came up with this recipe for my mom who is gluten free and on a very specific diet. They are the perfect appetizer or side dish for a warm hearty meal in the fall or winter. This would be a great dish to add to your Thanksgiving day feast too! The stuffing base is super simple with the main ingredients being the mushroom stems, almond flour and a variety of Italian spices. I am a huge mushroom fan. I love basically any and all mushrooms. When I go to the store…

Ratatouille — A Classic Vegetarian Dish

I'm pretty sure my inspiration to try out Ratatouille was actually the adorable Disney movie. Remy made me want to try it. So I made it for the first time a couple of years ago and my husband and I love it. It warms you right up with a mix of creamy tomato and béchamel sauces that have a little zing from hot red pepper flakes. The veggies all stacked into one another look pretty elegant too. I always feel fancy when I make this dish. I'll admit this ratatouille takes a fair bit of prep work, but it's all…

Sparkling Ginger Lemonade

I found this recipe in a Taste of Home magazine years ago when I got it in the mail. It had a section filled to the brim with lemon recipes (which I love!) and I decided to give this sparkling ginger lemonade a go. Turns out this recipe is a keeper. I love the little bite at the end from the ginger. You can taste the honey too which is different from the traditional sweetness of a lemonade made with a simple sugar syrup. The lovely little fizz from the sparkling water is an added bonus. I always use this…

The Perfect Grilled Cheese — Allergy Free

Grilled cheese is the ultimate comfort food. It warms you up inside out as you eat it. The perfect grilled cheese is crispy on the outside and ooey gooey on the inside. It's a hot, buttery, cheesy delight. Now that I've made you hungry, if you have food allergies like me, a classic grilled cheese might not be entirely possible for you, but no need to panic! I have found the perfect substitutes so we can all dig in to our own yummy allergy-free version of the best sandwich on earth... (that's just my opinion, but come on, you know…

Garlic Buttered Naan

My husband and I love Indian food. We especially love naan bread when we eat out, so I decided to try and make some naan at home. I got the idea of course, from the Great British Baking Show, my endless source of inspiration. They had to make yeasted and non yeasted flatbreads. Naan is yeasted which I was unaware of until I tried to make it. We’re already addicted to it, so I’m sure I’ll be making more soon! I looked at several different Garlic Butter Naan recipes online and I decided on trying the naan recipe on Host…
