Chia pudding is super delicious, healthy and so easy to make! It makes a great breakfast with jam, berries and granola piled on top or a yummy filling snack. The best thing about it is you can mix it up in five minutes! Perfect for meal prepping.

Chia Pudding Ingredients
There is only two required ingredients for this! The vanilla and maple syrup/honey make it way yummier though.
- Chia Seeds
- Coconut Milk*
- Vanilla Extract
- Maple Syrup or Honey
*You can use any plant based milk for this, but the coconut milk makes it super creamy and delicious. I might go even as far as to say it’s almost like eating ice cream!
Chia Pudding Directions
All you have to do is mix all the ingredients together! Then put in the fridge for at least 4 hours, or overnight if you want it for breakfast the next day.
When you take it out, it will be thick and creamy and delicious! Scoop into a bowl, put on your favorite toppings and enjoy.

Chia Pudding

- 1½ Cups Coconut Milk*
- ½ Cup Chia Seeds
- 2-3 Tbsp Maple Syrup or Honey
- 1 Tsp Vanilla Extract
Instructions
- If the coconut milk has separated blend until smooth and creamy.
- Mix all ingredients together in a bowl. Cover and refrigerate at least 4 hours or overnight.
- The chia pudding should thick and creamy when it's ready. Scoop out, put on toppings and enjoy! Keep refrigerated for up to 5 days.
